Serves : 2 cups
- 2 cups cooked and cooled dried large lima beans
- 1 ripe avocado pitted and peeled
- 1/4 cup 100% pure olive oil
- 2 tablespoons tamarind concentrate or fresh squeezed lime juice
- 1 teaspoon minced garlic
- 1/2 teaspoon ground cumin
- 1/8 teaspoon cayenne pepper
- 1 medium tomato diced
In food processor or blender, combine all ingredients except tomato; process to desired consistency.
Transfer to a serving bowl and stir in tomato; salt and pepper to taste.
Serve with tortilla chips, pita chips and assorted vegetables.
