Tajin Chicken Tacos
If you don’t have it already, you need to get some Tajin in your life. You can add it to the salted rim of your margaritas or sprinkle it on tortilla chips to serve with guac. But we used it (plus olive oil and agave) to coat chicken breasts for a simple air fryer chicken recipe that makes weeknight tacos quick, easy and super-duper tasty to boot!

Ingredients
1 tablespoon olive oil
2 tablespoons agave syrup, divided
1 tablespoon Tajín seasoning
1 teaspoon salt, divided
2 Smart Chicken boneless skinless chicken breasts (1 lb 4 oz)
1/2 cup mayo
2 teaspoons lime juice
1/4 teaspoon black pepper
1 bag (14 oz) classic shredded coleslaw mix
10 (6-inch) flour tortillas or crunchy taco shells
1/4 cup fresh cilantro leaves
2 radishes, thinly sliced
2 tablespoons sliced green onions
Directions
  • In large bowl, mix olive oil, 1 tablespoon agave nectar, Tajín, and 1/2 teaspoon salt. Add chicken breasts and turn to coat.
  • Place chicken in air fryer basket, standing against sides of basket if necessary. Set to 375°F; cook 8 minutes. Turn chicken; cook 6–8 minutes longer or until juice of chicken is clear when center of thickest part is cut (at least 165°F).
  • Meanwhile, in large bowl, combine remaining 1 tablespoon agave syrup, 1/2 teaspoon salt, mayonnaise, lime juice, and black pepper. Stir in coleslaw mix.
  • Slice or shred chicken breasts. Top tortillas or taco shells with chicken, then slaw. Serve with cilantro, sliced radishes, and sliced green onions.

 

TIPS:

  • Honey makes a fine substitute for the agave syrup.
  • Spice it up by serving with your favorite hot sauce or sliced jalapeño or serrano peppers.
