  • 3 cups diced watermelon about 1 1/2 pounds
  • 1/2 medium organic hot house cucumber peeled and diced to make 1 cup
  • 2 tablespoons fresh mint leaves slivered lightly packed
  • 2 tablespoons fresh lime juice about 1 large lime
  • 1 tablespoon Napa Valley organic olive oil
  • 1/8 teaspoon coarse ground black peppe
  • 1/8 teaspoon Le Saunier de Camargue fleur de sel sea salt
  • 2 dashes ground cinnamon
  • 1/4 teaspoon black pepper
  • 1/4 cup Kolios organic feta cheese optional


Combine watermelon, cucumber, and mint in a large bowl.� Mix the lime juice with the olive oil and pour over the fruit, season with pepper and salt.� Gently toss or cover and shake to mix without crushing the watermelon.� Sprinkle crumbled feta on top.� Garnish with whole mint sprigs.
