This red, white and blue wedge takes the standard salad up a notch. Grilled chicken and radicchio add interest and a hint of smoke, while blue cheese and white balsamic add complexity and interest. Honey balances the tartness of the vinegar and the pleasantly bitter radicchio for a beautiful riff on a classic wedge.

Ingredients
1/4 cup olive oil
1 teaspoon salt
1/2 teaspoon pepper
1 small red onion, thickly sliced
1 head radicchio, trimmed and quartered
2 Smart Chicken boneless skinless chicken breasts (1 lb 4 oz)
2 slices prosciutto, torn in small strips
1/2 cup cherry tomatoes, quartered
1/2 cup crumbled gorgonzola cheese (1 1/2 oz)
1 tablespoon white balsamic vinegar
1 tablespoon honey
1 tablespoon fresh parsley, chopped
Directions
  1. Heat grill to medium. In large bowl, combine olive oil, salt, and pepper. Brush red onion and radicchio with oil mixture; transfer to plate. Add chicken to bowl and turn to coat.
  2. Place chicken, radicchio, and onion on grill. Cover and cook chicken 13–18 minutes, turning once, until thermometer inserted in center reads 165°F. Cook onion and radicchio, cut side down, 3– 5 minutes, turning once, until lightly charred.
  3. Slice chicken. Serve radicchio wedges topped with sliced chicken, onion, prosciutto, tomatoes, and cheese. Drizzle with the vinegar and honey. Top with parsley.
