


Mediterranean Tilapia Foil Pack
Serve these garlic and lemon tilapia filets with a side of rice for a Mediterranean-inspired dinner that couldn’t be easier.

Mediterranean Tilapia Foil Pack

Ingredients
3 tbsp extra-virgin olive oil
1 tbsp lemon juice
1/2 tsp salt
1/4 tsp pepper
1/4 tsp finely grated lemon zest
1/4 tsp red pepper flakes
1 clove garlic, minced
4 (6 oz) tilapia fillets
1 tsp chopped fresh thyme
1/3 cup pitted kalamata olives, coarsely chopped
1 cup halved cherry tomatoes
8 thin slices of lemon
Directions
- Preheat the oven to 425° F. Cut 4 (18x12-inch) sheets of heavy-duty foil. Spray with cooking spray.
- In a small bowl, combine 1 tablespoon olive oil, lemon juice, salt, pepper, lemon zest, red pepper flakes and garlic. Brush mixture onto both side of tilapia fillets.
- Arrange one tilapia fillet and about one-quarter each of the olives and tomatoes. Drizzle with 1/2 tablespoon olive oil and place two lemon slices on the top. Bring up 2 sides of foil so edges meet. Seal edges, making tight 1/2-inch fold; fold again, allowing space for heat circulation and expansion. Fold other sides to seal. Repeat to make 3 more packets; divide between 2 baking sheets.
- Transfer to the oven and bake until tilapia is just flakey, about 15 to 18 minutes. Let rest 5 minutes before opening. Carefully unfold foil away from face and serve.
