Make-Ahead Greek Orzo Pasta Salad

Ingredients
1½ cups uncooked orzo pasta
3 tbsp fresh lemon juice
2 tbsp olive oil
¾ tsp salt
½ tsp freshly ground pepper
1 cup cherry tomatoes, halved
1 cup seedless cucumber, chopped
¼ cup kalamata olives, halved
1 cup feta, crumbled
Directions
- Cook pasta as directed on package. Rinse with cold water and drain well.
- Meanwhile, in medium bowl, whisk lemon juice, oil, salt, and pepper. Stir in pasta, tomatoes, cucumber, and olives. Gently stir in cheese.
- Transfer to storage container and refrigerate until ready to serve, up to 4 days.
