Caprese Skillet Gnocchi

Ingredients
1 package (16 ounces) gnocchi
1 package (10 ounces) cherry tomatoes
1 package (8 ounces) mozzarella pearls, patted dry
¼ cup basil leaves, thinly sliced
2 tablespoons balsamic reduction
Directions
- In 12-inch skillet, heat oil over medium-high. Add gnocchi, salt and pepper. Cook 5–7 minutes, until browned on outside.
- Add tomatoes and cook 2–4 minutes, stirring often, until tomatoes burst. Remove from heat and stir in mozzarella. Drizzle with balsamic reduction and top with basil.
TIP: If you like your meals with a bit of a kick, you can swap red pepper flakes for the regular pepper called for in this recipe.
