Ingredients
16 oz Velveeta Cheese
1 can (10 oz) diced tomatoes
8 oz ground beef
1 can (4 oz) diced green chiles
1/4 cilantro, finely chopped
1/4 cup avocado, cubed
1/4 cup red onion, finely chopped
Directions
  1. Cut Velveeta into ½-inch cubes and set aside. Prepare garnishes: finely chop cilantro, dice avocado, and finely dice red onion; set aside.
  2. In a skillet, brown beef, and crumble. Set aside.
  3. Combine Velveeta and undrained tomatoes in the same skillet. Cook over medium heat, stirring, until melted completely, 4-6 minutes.
  4. Stir in beef. Cook, stirring until hot, 1-2 minutes.
  5. Top with cilantro, avocado and red onion to serve.
