Tuna Melt Tomatoes

Ingredients
1/4 cup Essential Everyday plain Greek yogurt
2 tablespoon Essential Everyday mayonnaise
2-5 ounce cans Essential Everyday chunk light tuna, drained
1/4 cup celery, minced
2 tablespoons red onion, minced
2 tablespoons fresh parsley chopped
1 teaspoon salt
1 teaspoon black pepper
1 cup Essential Everyday Italian style six cheese blend
6 large tomatoes
Directions
- Preheat oven to 450°F
- Cut a thin slice off the bottom of each tomato so they able to sit upright.
- Cut the top 1/3 off of each tomato and scoop out the flesh, discard.
- In a mixing bowl add yogurt, mayonnaise, tuna, celery, red onion, and parsley. Mix to combine and season with salt and pepper.
- Evenly distribute the mixture between the 6 tomatoes and top with the cheese. Cover the tomatoes with the tomato tops
- Transfer the filled tomatoes to a baking sheet and cook for 15-20 minutes or until filling is warmed through and cheese is melted.
