Walleye with Lemon Pesto Butter

Walleye with Lemon Pesto Butter

Ingredients
4 tbsp unsalted butter, room temperature
2 tbsp pesto
1 tsp grated lemon zest
2 tbsp lemon juice
1 tsp salt
1/4 tsp freshly ground black pepper
4 (6 oz each) walleye fillets
Chopped parsley or basil, for garnish (if desired)

Directions
- Adjust oven rack 6 inches from broiler and preheat broiler. Line a large, rimmed baking sheet with foil and spray with cooking spray.
- In a small bowl, combine the butter, pesto, lemon zest, lemon juice, salt and pepper.
- Place walleye fillets on the prepared baking sheet. Spread 1 tablespoon of the butter mixture evenly onto each filet and broil until fish is flaky and cooked through, about 5 to 8 minutes.
- Immediately transfer filets to serving plates and top each with a dollop of the remaining butter mixture. Garnish with chopped parsley or basil, if desired. Serve hot with lemon wedges on the side.
