Fish Taco Bowl with Lime Chipotle Sauce

Ingredients
1 large mango, peeled and cubed
2 tablespoons red onion, chopped
1 tablespoon cilantro, chopped
2 tablespoons fresh lime juice
Salt, to taste
Black pepper, to taste
1/4 cup mayonnaise
1 tablespoon lime juice
1 teaspoon chili powder
1/4 teaspoon cayenne pepper
4 Gorton's Air Fry Fish Fillets
1 cup cooked brown rice (or your favorite grain)
1 cup red cabbage, thinly sliced
Jalapeno slices for serving
Directions
- Bake or air fry the fish fillets following the directions on the package.
- Make the mango salsa: in medium bowl combine all the ingredient for the salsa and toss to mix.
- Make the chipotle lime sauce: in a small bowl add the ingredients for the sauce and whisk until smooth.
- To serve, in two large bowls, arrange the rice and red cabbage. Top with the flaked fish fillets, mango salsa and drizzle with the prepared sauce. Top with a slice or two of jalapenos.
