Sweet Potato Chili Nachos

Ingredients
2 sweet potatoes, sliced into ¼-inch thick rounds
1 tbsp olive oil
½ tsp kosher salt
1 (14-oz) can Hormel Chili
2 cups pepper jack cheese, shredded
Suggested toppings:
Pickled peppers
Cilantro
Avocado
Pickled red onion
Directions
- Heat oven to 425°F. Line 2 large, rimmed baking sheets with parchment paper.
- Place sweet potatoes on sheets. Drizzle with olive oil. Sprinkle with salt. Bake 20–25 minutes, rotating pans halfway through, or until potatoes are tender and browned.
- On oven-safe platter, place layers of sweet potato. Top with half the chili. Sprinkle with half the cheese. Repeat with another layer of sweet potatoes, remaining chili, and cheese.
- Bake 10–15 minutes, or until chili is hot and cheese is melted. Serve immediately with toppings of choice.
