Ingredients
2 (15 oz) cans chickpeas, rinsed and dried off
2 1/2 tbsp Pompeian Smooth Extra Virgin Olive Oil
1 1/2 tsp kosher salt
3 tablespoon garam masala
1 lemon, zested
1/4 cup fresh chopped parsley for garnish
Directions
  1. Heat oven to 400°F. In a large mixing bowl, combine chickpeas, 2 Pompeian Smooth Extra Virgin Olive Oil, kosher salt, garam masala and the zest of one lemon. Toss and mix well.
  2. Spread chickpeas on a rimmed baking sheet and bake 30-35 minutes or until crunchy, shaking the pan halfway through. Remove from oven and toss with chopped parsley to serve.
