Fish Sticks with Herb Aioli Dip

Ingredients
1 package Gorton’s Fish Sticks
1 English cucumber, sliced
1 bunch of radishes, sliced
2 tbsp sour cream
2 tbsp lemon juice
2 tbsp fresh dill
3 tbsp olive oil
2 egg yolks
1 garlic clove
1 tsp mustard
1 lemon, juiced
Salt to taste
Black pepper to taste
1 tbsp fresh herbs, dill, chives, mint, tarragon
½ cup olive oil or more
Directions
- Cook the fish sticks on the air fryer as per package directions.
- In a blender add all ingredients for the aioli sauce. Blend until it thickens. Add more oil to adjust the thickness. It should look like a mayonnaise texture.
- In a small bowl whisk together sour cream, lemon juice, olive oil and fresh dill.
- Pour the mixture over cucumbers and radishes. Combine well and refrigerate. It can be prepared ahead of time.
- Serve fish sticks on a board with herb aioli dip and cucumber salad, or other sides as per your taste.
