Everything Bagel Bacon Breakfast Bake

Ingredients
4 eggs, beaten
2 cups half and half
3/4 tsp salt
1/4 tsp freshly ground black pepper
1/4 tsp cayenne
5 day old everything bagels, cut into 1-inch pieces (about 14 oz)
1 1/2 cups shredded cheddar cheese (6 oz)
5 slices bacon, cooked and crumbled
2 tbsp everything bagel seasoning
Directions
- Spray 9x9-inch (1.5-quart) baking dish with cooking spray.
- In large bowl, beat eggs, half-and-half, salt, pepper and cayenne with whisk until well blended. Add the bagel pieces and stir to coat. Let sit for 10 minutes. Stir again and pour half of the bread mixture into the baking dish. Sprinkle 1 cup of the cheese, half of the bacon evenly over bagels and 1 tablespoon of bagel seasoning. Cover with remaining bagel mixture and sprinkle the top with remaining 1/2 cup cheese and remaining half of bacon. Cover with plastic wrap. Refrigerate at least 4 hours but no longer than 24 hours.
- Preheat oven to 350°F. Uncover baking dish and sprinkle the top with remaining 1 tablespoon bagel seasoning. Bake, uncovered, 40 to 50 minutes or until golden brown and set in the center. Let stand 15 minutes before serving.
Tip:
- To make your own bagel seasoning, mix together 1 tablespoons poppy seeds, 1 tablespoon white sesame seeds, 1 tablespoon dried minced garlic, 1 tablespoondried minced onion, 2 teaspoons flaky sea salt or Kosher salt
- To give this breakfast bake even more bagel flavor, cube 4 oz of cold cream cheese and scatter over the middle layer of the casserole.
