Ingredients
Vegetable oil, for frying
24 square wonton wrappers
1/4 tsp salt
6 medium avocados, ripe
1/2 cup chopped spicy kimchi, drained
2 medium green onions, thinly sliced
1 tbsp lime juice
1 tsp soy sauce
2 tbsp cilantro, finely chopped
1 tsp toasted sesame seed
Directions
  1. In deep fat fryer or heavy saucepan, heat 3–4 inches oil to 350°F. Cut wonton wrappers in half diagonally. Fry in batches 1–2 minutes or until crisp and golden, stirring to prevent wrappers from sticking together. Drain on paper towels. Sprinkle with salt.
  2. In a medium mixing bowl, mash avocados. Add kimchi, green onions, lime juice, and soy sauce; gently stir to combine. Garnish with cilantro and sesame seeds. Top with additional kimchi, if desired.
