Ingredients
2 sweet potatoes, sliced into ¼-inch thick rounds
1 tbsp olive oil
½ tsp kosher salt
1 (14-oz) can Hormel Chili
2 cups pepper jack cheese, shredded
Suggested toppings:
Pickled peppers
Cilantro
Avocado
Pickled red onion
Directions
  1. Heat oven to 425°F. Line 2 large, rimmed baking sheets with parchment paper.
  2. Place sweet potatoes on sheets. Drizzle with olive oil. Sprinkle with salt. Bake 20–25 minutes, rotating pans halfway through, or until potatoes are tender and browned.
  3. On oven-safe platter, place layers of sweet potato. Top with half the chili. Sprinkle with half the cheese. Repeat with another layer of sweet potatoes, remaining chili, and cheese.
  4. Bake 10–15 minutes, or until chili is hot and cheese is melted. Serve immediately with toppings of choice.
