Beet & Blue Cheese Crostini

Ingredients
1 lb small beets (1½–2 inch)
1 tbsp olive oil
¼ cup maple syrup
2 tbsp balsamic vinegar
24 slices (1/2 inch thick) baguette
4 oz blue cheese, softened
2 oz butter, softened
1½ cups baby arugula
1 tbsp chopped pistachios
Directions
- Heat oven to 425°F. Coat 2-quart baking dish with cooking spray. Trim beet tops, exposing flesh. Wash beets; leave whole with root ends attached. Place in prepared pan. Coat with oil. Sprinkle with salt and pepper. Cover tightly with foil.
- Roast 50–60 minutes, or until beets are tender. Cool until easy to handle, about 30 minutes. Cut off root ends, peel beets. Cut into â…›-inch slices.
- Meanwhile, combine maple syrup and vinegar in 1-quart saucepan. Heat to boiling. Reduce to a simmer; cook 7–10 minutes or until reduced by half.
- Reduce oven to 325°F. Coat large, rimmed sheet pan with cooking spray. Place bread slices on pan. Bake 6–9 minutes or until crisp.
- Meanwhile, in medium bowl, mix blue cheese and butter. Spread on bread slices. Top with arugula and 2–3 beet slices. Drizzle with maple balsamic reduction and sprinkle with nuts.
TIP: Precooked beets can be used to save time. Pat dry before using.
