Ingredients
1 lb small beets (1½–2 inch)
1 tbsp olive oil
¼ cup maple syrup
2 tbsp balsamic vinegar
24 slices (1/2 inch thick) baguette
4 oz blue cheese, softened
2 oz butter, softened
1½ cups baby arugula
1 tbsp chopped pistachios
Directions
  1. Heat oven to 425°F. Coat 2-quart baking dish with cooking spray. Trim beet tops, exposing flesh. Wash beets; leave whole with root ends attached. Place in prepared pan. Coat with oil. Sprinkle with salt and pepper. Cover tightly with foil.
  2. Roast 50–60 minutes, or until beets are tender. Cool until easy to handle, about 30 minutes. Cut off root ends, peel beets. Cut into â…›-inch slices.
  3. Meanwhile, combine maple syrup and vinegar in 1-quart saucepan. Heat to boiling. Reduce to a simmer; cook 7–10 minutes or until reduced by half.
  4. Reduce oven to 325°F. Coat large, rimmed sheet pan with cooking spray. Place bread slices on pan. Bake 6–9 minutes or until crisp.
  5. Meanwhile, in medium bowl, mix blue cheese and butter. Spread on bread slices. Top with arugula and 2–3 beet slices. Drizzle with maple balsamic reduction and sprinkle with nuts. 

TIP: Precooked beets can be used to save time. Pat dry before using.
