Crispy Fish Gyro with Air Fried Fillets

Ingredients
6-8 Air Fried Gorton’s fish fillets
Pita bread
1 tomato diced
1 cup cucumbers diced
1/2 cup red onion diced
1/2 cup olives
1 tbsp olive oil
Salt, to taste
Black pepper, to taste
2 tbsp fresh parsley
2 tbsp crumbled feta cheese
1 cup Greek yogurt
2 tbsp lemon juice
1/4 cup olive oil
1 garlic clove, grated
Salt, to taste
Black pepper, to taste
2 tbsp fresh dill, chopped
Directions
- In a medium bowl combine tomatoes, cucumbers, red onion, olives, and parsley. Drizzle olive oil and season. Toss well and set aside.
- In a small bowl stir together all ingredients for dressing. Refrigerate for 30 minutes. (It can be done the day before)
- Cook the fish fillets in an air fryer as per package instructions.
- Warm pita bread.
- Build gyro by spreading tzatziki sauce on a pita bread, topped with vegetable mixture.
- Top with 1-2 fish fillets.
- Sprinkle feta cheese. Roll the pita and serve.
