Kimchi Guacamole

Ingredients
Vegetable oil, for frying
24 square wonton wrappers
1/4 tsp salt
6 medium avocados, ripe
1/2 cup chopped spicy kimchi, drained
2 medium green onions, thinly sliced
1 tbsp lime juice
1 tsp soy sauce
2 tbsp cilantro, finely chopped
1 tsp toasted sesame seed
Directions
- In deep fat fryer or heavy saucepan, heat 3–4 inches oil to 350°F. Cut wonton wrappers in half diagonally. Fry in batches 1–2 minutes or until crisp and golden, stirring to prevent wrappers from sticking together. Drain on paper towels. Sprinkle with salt.
- In a medium mixing bowl, mash avocados. Add kimchi, green onions, lime juice, and soy sauce; gently stir to combine. Garnish with cilantro and sesame seeds. Top with additional kimchi, if desired.
