It was at a French bakery where I worked throughout school that I first heard of salted caramel - called Salty caramel by a chef in his thick French accent. When I began making salty caramel in 1996, people would drive from neighboring states for a taste. We still make caramel the way we always have, with sugar toasted in a kettle over an open fire. This flavor is a nod to a certain beloved children's book author (hint: think giant peaches and chocolate factories) who adored krokan, a Norwegian treat made of caramelized butter and almond brittle. He wrote that he'd dream about the flavor for days-and who can blame him? Salted and roasted ground peanuts with crunchy, dark chocolate flecks. Gluten free. The original name of this flavor is The Buckeye State. To this day, if you come into our scoop shops and order it, our team knows exactly what you want. I created this ice cream as an homage to the state candy of Ohio, the buckeye - little rounds of dark chocolate filled with peanut butter. The peanut butter we use is roasted just for us and crunchy chocolate flecks punctuate the uber creaminess. It's total comfort for Buckeyes - and Buckeyes at heart. - Jeni. Oven-toasted oat streusel with sweet-tart brambleberry jam of blackberries and blackcurrants layered throughout vanilla ice cream. I first made this flavor in 2009 for a collection highlighting the flavors and culture of Appalachia. It's inspired by the brambly berry bushes of blackberries and blackcurrants that grow all over the hillsides of the Appalachian foothills—the ones I would pick as a child. Mouth-filling and palate-gripping with a pleasingly dry finish. Packer with fair trade cocoa and not mush else. Gluten-free. Making real chocolate ice cream isn't easy. It took me five years to perfect this flavor, packed with so much real cocoa—three times more than most chocolate ice creams out there—that it is overflowing with rich, bittersweet chocolate flavor and is dense but still creamy.
