Ingredients
2 tablespoons Essential Everyday unsalted butter
1 tablespoon Essential Everyday sliced jalapenos, chopped
2 cloves garlic, chopped
4 cans Essential Everyday sweet corn, drained
1-8 ounce package Essential Everyday cream cheese
8 ounces white cheddar cheese, shredded
1/2 cup Essential Everyday breadcrumbs
1/2 cup Essential Everyday shredded parmesan cheese
1 tablespoon fresh parsley, chopped
1 tablespoon fresh tarragon, chopped
2 teaspoons salt
1 teaspoon pepper
Directions
  1. Preheat oven to 350 degrees.
  2. In a large saute pan over medium heat, melt butter. Add garlic and jalapeños and saute until fragrant, about 3-4 minutes.
  3. Add drained sweet corn, cream cheese and cheddar cheese. Cook for 3-4 minutes, until cheese is melted and incorporated. Season with salt and pepper.
  4. Pour mixture into a 9x9 baking pan.
  5. In a small mixing bowl, combine breadcrumbs, Parmesan cheese, parsley and tarragon.
  6. Pour an even layer of the breadcrumb mixture on top of the corn mix. Bake until topping is golden brown, about 10-12 minutes.
