Prep-Ahead Marinated Kale & Chickpea Salad

DRESSING
¼ cup Kemps Cottage Cheese
11/2 cups packed mixed herbs, like parsley, cilantro, dill, tarragon, basil
¼ cup olive oil
1 garlic clove
1 tsp paprika
½ tsp kosher salt
1 tbsp white or red wine vinegar
Zest & juice of one lemon
Salad
2 bunches kale, tough inner stems discarded and chopped into bite-size pieces
1 can chickpeas, drained and rinsed
1 small red onion, thinly sliced
2 cups raw or cooked sturdy vegetables like cauliflower, broccoli, Brussels sprouts, carrots, or diced beets
1/2 cup crumbled feta
Directions
- Blend all dressing ingredients in food processor or blender until smooth. Taste and adjust seasoning if needed.
- In large bowl, toss salad ingredients together. Drizzle half of the dressing over salad and toss to mix, adding more dressing if necessary. Salad flavors will continue to meld in fridge. Serve within a day or two.
