Ingredients
6-8 Air Fried Gorton’s fish fillets
Pita bread
1 tomato diced
1 cup cucumbers diced
1/2 cup red onion diced
1/2 cup olives
1 tbsp olive oil
Salt, to taste
Black pepper, to taste
2 tbsp fresh parsley
2 tbsp crumbled feta cheese
1 cup Greek yogurt
2 tbsp lemon juice
1/4 cup olive oil
1 garlic clove, grated
Salt, to taste
Black pepper, to taste
2 tbsp fresh dill, chopped
Directions
  1. In a medium bowl combine tomatoes, cucumbers, red onion, olives, and parsley. Drizzle olive oil and season. Toss well and set aside.
  2. In a small bowl stir together all ingredients for dressing. Refrigerate for 30 minutes. (It can be done the day before)
  3. Cook the fish fillets in an air fryer as per package instructions.
  4. Warm pita bread.
  5. Build gyro by spreading tzatziki sauce on a pita bread, topped with vegetable mixture.
  6. Top with 1-2 fish fillets.
  7. Sprinkle feta cheese. Roll the pita and serve.
