Caramel Pear Crumble

Ingredients
1/4 cup cornstarch
1/4 cup cold water
1/2 tsp cinnamon, divided
2½ lbs slightly ripe Bartlett pears, peeled, cored, cut into 1/2-inch slices (about 5 cups)
1/2 cup caramel topping, plus additional for serving
1/2 cup all-purpose flour
1/4 cup granulated sugar
1/4 tsp salt
3/4 cup Kemp’s Heavy Whipping Cream
1 tbsp powdered sugar
Directions
- Heat oven to 375°F. Coat 8-inch square (2-quart) glass baking dish with cooking spray. In large bowl, beat cornstarch, cold water, and ¼ teaspoon cinnamon with fork or small whisk. Add pears and gently mix until evenly coated. Spoon into baking dish. Drizzle with caramel topping.
- In medium bowl, mix flour, granulated sugar, and salt. Cut in butter, using pastry blender until mixture looks like coarse crumbs. Crumble over pear mixture.
- Bake uncovered 5 minutes, or until pears are tender and topping is golden brown. Let stand 10 minutes.
- Meanwhile, add Kemp’s Heavy Whipping Cream to a large mixing bowl orthe bowl of a stand mixer. Use a hand mixer or the whisk attachment on medium speed 3–5 minutes, until starting to thicken. Add powdered sugar and remaining cinnamon. Continue to whip until cream thickens to soft peaks, about 1–2 minutes. Do not overmix.
- Top with whipped cream and additional caramel sauce, if desired. Serve warm.
