Double Cookie Dough Ice Cream Sandwiches

2 packages break 'n bake chocolate chip cookie dough (16 ounce)
1 cup semi-sweet mini chocolate chips
1 container Kemps Chocolate Chip Cookie Dough ice cream (1.5 quart) softened
Directions
- Prepare cookies according to package directions; cool completely.
- Place chocolate chips in shallow dish. Place 1 scoop softened ice cream on bottom side of one cookie, top with second cookie gently pressing together. Roll ice cream center in chocolate chips.
- Wrap sandwich with foil; place in freezer. Repeat with remaining sandwiches; freeze overnight.
