Ingredients
4 corn tortillas, cut into ¼” wide strips
3 tablespoons Essential Everyday vegetable oil, divided
1 yellow onion, diced
4 garlic cloves, chopped
3 adobo chipotles, finely chopped
2 tablespoons chili powder
1 can (14.5 oz) Essential Everyday diced tomatoes
1 can (15 oz) Essential Everyday black beans, drained and rinsed
4 cups Essential EverydayⓇ Vegetable Broth
1 cup thawed frozen corn kernels
4 green onions, thinly sliced
1 jalapeño, thinly sliced
½ cup sour cream
½ cup shredded Cheddar cheese
Chopped cilantro
Directions
  1. Preheat oven to 425℉.
  2. On a large sheet pan, toss together tortilla strips and 1 tablespoon oil. Bake until crispy.
  3. In a large saucepan, heat remaining 2 tablespoons oil over medium heat. Add onion and sauté until softened, about 5 minutes. Add garlic, chipotles, and chili powder and cook, stirring, 1 minute more.
  4. Add tomatoes, beans, and broth. Bring soup to a simmer and cook for 15 minutes to allow flavors to meld.
