Overnight Baked French Toast with Berry Compote

Ingredients
1 tablespoon Wild HarvestⓇ Unsalted Butter, softened 
9 Wild HarvestⓇ Organic Large Eggs 
2 cups Wild HarvestⓇ Whole Milk 
1 1/2 cups heavy cream 
1/4 cup Wild HarvestⓇ Organic Maple Syrup  
1 1/2 teaspoons Wild HarvestⓇ Organic Vanilla Extract 
1 1/2 teaspoons Wild HarvestⓇ Ground Cinnamon 
3/4 teaspoon fine sea salt 
One 20oz loaf challah bread, cut into 1” thick slices 
Two 10oz bags Wild HarvestⓇ Organic Frozen Berry Blend  
1/4 cup Wild HarvestⓇ Organic Maple Syrup 
1 tablespoon lemon juice 
Whipped cream, optional 
Directions
  1. Butter a 9” x 13” baking dish. 
  2. In a large bowl, whisk together eggs, milk, cream, maple syrup, vanilla, cinnamon, and salt. Submerge each slice into the custard and arrange in prepared baking dish in a single layer, overlapping the slices. Pour remaining custard over bread. Cover with plastic wrap and refrigerate overnight.
  3. Preheat the oven to 350℉. 
  4. Remove plastic wrap from baking dish. Bake 55-60 minutes, or until golden brown and custard has set.
  5. In a medium saucepan, combine frozen berries, maple syrup, and lemon juice. Cook, stirring on medium heat until fruit begins to break down and thicken, 10-15 minutes.
  6. Serve baked French toast with berry compote and whipped cream, if desired.
