Honeyed Panna Cotta with Mango

Ingredients
1 envelope (2¼ teaspoons) unflavored gelatin
1½ cups heavy cream
⅓ cup Wild HarvestⓇ Organic Wildflower Honey
1 cup Wild HarvestⓇ Whole Milk
1 teaspoon Wild HarvestⓇ Vanilla Extract
1 large mango, peeled, pitted, and cut into ¼” dice
Finely grated zest of 1 lime
1 tablespoon lime juice
1 tablespoon chopped Wild HarvestⓇ Organic Fresh Mint
Directions
  1. In a small bowl sprinkle gelatin over 3 tablespoons cold water. Let sit 5 minutes.
  2. In a small saucepan combine cream and honey. Bring to a simmer over medium heat, stirring frequently. Take off heat and whisk in gelatin mixture until dissolved. Whisk in milk and vanilla.
  3. Divide panna cotta among 6 small cups or glasses. Cover and refrigerate until set, at least 4 hours or up to overnight.
  4. Just before serving, in a medium bowl stir to combine mango, lime zest and juice, and mint.
  5. To serve, spoon a little mango mixture onto each panna cotta.
