Fish Taco Bowl with Lime Chipotle Sauce

Ingredients
1 large mango, peeled and cubed
2 tablespoons red onion, chopped
1 tablespoon cilantro, chopped
2 tablespoons fresh lime juice
Salt, to taste
Black pepper, to taste
1/4 cup mayonnaise
1 tablespoon lime juice
1 teaspoon chili powder
1/4 teaspoon cayenne pepper
4 Gorton's Air Fry Fish Fillets
1 cup cooked brown rice (or your favorite grain)
1 cup red cabbage, thinly sliced
Jalapeno slices for serving
Directions
  1. Bake or air fry the fish fillets following the directions on the package.
  2. Make the mango salsa: in medium bowl combine all the ingredient for the salsa and toss to mix.
  3. Make the chipotle lime sauce: in a small bowl add the ingredients for the sauce and whisk until smooth.
  4. To serve, in two large bowls, arrange the rice and red cabbage. Top with the flaked fish fillets, mango salsa and drizzle with the prepared sauce. Top with a slice or two of jalapenos.
