Cheesy Bacon Potato Salad

Ingredients
3 lbs yellow potatoes, peeled and cut into 1” cubes
3/4 cup chopped, cooked Essential Everyday Bacon
3/4 cup celery, diced
1/3 cup red onion, finely chopped
2 tablespoons fresh parsley, finely chopped
1 1/2 tablespoon fresh dill, finely chopped
1 cup shredded Essential Everyday Mild Cheddar
4 hard boiled Essential Everyday eggs, chopped
1 cup Essential Everyday Mayonnaise
1 tablespoon Essential Everyday Yellow Mustard
1 tablespoon white vinegar
1 teaspoon kosher salt
1/2 teaspoon garlic powder
Ground black pepper to taste
Garnish with paprika and chopped fresh herbs
Directions
  1. Bring 12 cups of water + 1 tbsp salt to a boil in a large pot. Once boiling, add the potatoes. Reduce heat and simmer for 11-13 minutes, until fork tender. Drain and rinse until cold water to cool off.
  2. Meanwhile, cook bacon as instructed on packaging. Let cool, then chop finely.
  3. In a large bowl, whisk together mayonnaise, mustard, vinegar, salt, garlic powder and pepper until smooth.
  4. Add in the potatoes, bacon, celery, onion, parsley, dill, cheddar and eggs. Stir until well coated. 

Optional: Refrigerate 1 hour before serving. Garnish with paprika and more chopped herbs.
