Cheesy Bacon Potato Salad

3 lbs yellow potatoes, peeled and cut into 1” cubes
3/4 cup chopped, cooked Essential Everyday Bacon
3/4 cup celery, diced
1/3 cup red onion, finely chopped
2 tablespoons fresh parsley, finely chopped
1 1/2 tablespoon fresh dill, finely chopped
1 cup shredded Essential Everyday Mild Cheddar
4 hard boiled Essential Everyday eggs, chopped
1 cup Essential Everyday Mayonnaise
1 tablespoon Essential Everyday Yellow Mustard
1 tablespoon white vinegar
1 teaspoon kosher salt
1/2 teaspoon garlic powder
Ground black pepper to taste
Garnish with paprika and chopped fresh herbs
Directions
- Bring 12 cups of water + 1 tbsp salt to a boil in a large pot. Once boiling, add the potatoes. Reduce heat and simmer for 11-13 minutes, until fork tender. Drain and rinse until cold water to cool off.
- Meanwhile, cook bacon as instructed on packaging. Let cool, then chop finely.
- In a large bowl, whisk together mayonnaise, mustard, vinegar, salt, garlic powder and pepper until smooth.
- Add in the potatoes, bacon, celery, onion, parsley, dill, cheddar and eggs. Stir until well coated.
Optional: Refrigerate 1 hour before serving. Garnish with paprika and more chopped herbs.
