Air Fryer Stone Fruit Chicken Caprese

Ingredients
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
4 Smart Chicken boneless skinless chicken breasts (2 lb 8 oz)
1 large lemon, zested and juiced
3 nectarines, halved, pitted and cut into wedges
1 ball (4 oz) burrata cheese, quartered
1 tablespoon chopped Calabrian chiles
1/4 cup fresh basil leaves
Directions
- In large bowl, mix olive oil, salt, and pepper. Add chicken breasts and turn to coat.
- Place chicken in air fryer basket, standing against sides of basket if necessary. Set to 350°F; cook 18 minutes. Turn chicken; cook 8–10 minutes longer, or until juice of chicken is clear when center of thickest part is cut (at least 165°F).
- Place chicken breasts on platter; drizzle with lemon juice. Top with nectarines, burrata, chiles, lemon zest, and basil.
TIPS:
- Drizzle with additional olive oil if desired.
- Plums or peaches make excellent substitutes for the nectarines.
