Pulled Chicken Burrito Bowl

Ingredients
1 pound chicken breasts
3 cups Essential Everyday chicken broth
1 cup Essential Everyday honey honey barbecue sauce
1-12 ounce bag Essential Everyday riced cauliflower, prepared
2 cups Essential Everyday mild cheddar cheese
1 cup Essential Everyday thick & chunky salsa
Sliced avocado
Cherry tomatoes
Fresh Jalapeño
Essential Everyday tortilla strips
Directions
- In a medium sized pot add the chicken breasts and chicken broth and bring to a boil over high heat. Reduce heat to low, cover, and cook for 10-12 minutes, until the chicken is cooked through.
- Transfer the cooked chicken breasts to a medium sized bowl and shred using forks. Add the barbecue sauce and mix to combine.
- Place 3/4 cup of prepared riced cauliflower into a serving bowl. Top with 1/4 of the shredded chicken mixture, 1/2 cup cheese, 1/4 cup salsa, along with other optional garnishes.
