Ingredients
7 oz Johnsonville smoked sausage, cut into 8 pieces
1 onion, cut into wedges
1 bell pepper, cut into thin strips
14 oz fingerling potatoes, halved
1 tablespoon balsamic vinegar
1 tablespoon salt
1 tablespoon olive oil
¼ teaspoon ground black pepper
Directions
  1. Place potatoes and ½ teaspoon salt in 3-quart saucepan. Cover with 2 inches water; bring to a boil.
  2. Reduce to a simmer and cook 10 minutes, or until potatoes are tender. Drain.
  3. Meanwhile, in a large skillet, heat oil over medium-high. Add onion and bell pepper; cook 5–6 minutes or until crisp tender, stirring occasionally. Add potatoes, sausage, remaining 1/2 teaspoon salt, and pepper; cook and stir4–5 minutes or until heated through.
  4. Drizzle balsamic vinegar over the skillet before serving.
