Ingredients
½ cups apple cider vinegar
1 Tbsp sugar
1½ tsp kosher salt
1 red onion, thinly sliced
1 (24-inch) baguette
½ cup shredded provolone
½ cup shredded sharp white cheddar
1 lb Coca-Cola Pulled Pork, sauced
½ cup shredded smoked mozzarella cheese
1 ear of corn, kernels removed
½ cup fresh basil, chiffonade cut
Directions
  1. Make pickled onions by whisking together apple cider vinegar, sugar and salt. Place onions in a jar or bowl and cover with mixture. Leave at room temperature for 1 hour. Drain before using.
  2. Preheat broiler. Split baguette in half horizontally, then in half crosswise. Place on large baking sheet, cut sides up, and broil 3 to 5 minutes or until golden brown. Lower over temperature to 400°F.
  3. Sprinkle with provolone and sharp white cheddar cheese. Top with shredded pork, smoked mozzarella and corn.
  4. Bake 5 to 7 minutes or until cheese is melted and bread is crisped. Top with fresh basil and pickled onions to serve.
