Coca-Cola Pulled Pork

Ingredients
5 lb boneless pork butt or shoulder roast
1 liter (about 3, 12-oz cans) Coca-Cola
½ white or yellow onion, finely chopped
2 tsp garlic powder
1 tsp chili powder
½ tsp black pepper
1 tbsp kosher salt
Directions
- Add the first 6 ingredients to a slow cooker or covered baking dish.
- The Coca-Cola will fizz! Once it has subsided, sprinkle with 1 tbsp kosher salt.
- Cook 6 hours in the slow cooker or 3 hours in a 350° oven, until meat shreds easily and the roast is falling apart.
- Remove roast from cooking vessel.
- Set aside 1-2 cups of the braising liquid.
- Shred meat with a fork and add back to pot.
- Mix in 1-2 cups of Coca-Cola BBQ sauce.
- Add the braising liquid you set aside, as needed, when you reheat, in order to keep the meat moist.
