Ultimate Loaded Tots

Ingredients
1 (20oz) package frozen sweet potato tots
1 (28oz) can Saucy Spoon Spicy Roasted Chipotle Baked Beans
1 cup chopped cooked chicken
1 cup frozen corn
1/2 large red bell pepper, chopped (3/4 cup)
1 1/2 cups (6oz) shredded mild cheddar cheese
1/4 cup chopped fresh cilantro
1 ripe avocado, peeled, pitted and mashed
1/4 cup sour cream
2 teaspoons lime juice
1 clove garlic, minced
1/4 teaspoon salt
Directions
- Preheat oven to 425°F. Line a rimmed baking sheet with parchment paper or foil. Place tots on prepared pan in single layer. Bake tots for 15 to 20 minutes or until starting to brown and get crispy. Meanwhile place beans in a colander and drain.
- Remove tots from the oven and top with beans, chicken, corn, and bell pepper. Return to oven and bake 8 to 10 minutes or until hot. Add cheese and return to oven for 3 to 5 minutes or until cheese is melted. Sprinkle with cilantro and serve with Avocado Crema.
- To make crema, place avocado in a medium bowl and mash with a fork. Add remaining ingredients and mix well. Or for a smoother crema, place all ingredients in a small food processor and process until smooth.
Tips: Make this recipe vegetarian by eliminating the chicken. Add crumbled firm tofu, if desired.
