Ingredients
1 ½ cup Essential Everyday creamy peanut butter
1 cup Essential Everyday brown sugar
1 cup Essential Everyday corn syrup
2 tsp Essential Everyday vanilla extract
5 cups Essential Everyday cornflake cereal
1 cup Essential Everyday pecan pieces
16 oz Essential Everyday white chocolate baking chips
1 1/2 cup Essential Everyday powdered sugar
2 tbsp milk
A few drops of green gel food coloring
Sprinkles
Directions
  1. In a large pot over medium heat, whisk together peanut butter, brown sugar, corn syrup and vanilla extract until completely smooth.
  2. Remove from heat and stir in the cornflakes and pecans until well combined.
  3. Press the mixture firmly into a 9x13” baking dish lined with parchment paper. Refrigerate or freeze while you melt the chocolate.
  4. Add white chocolate chips to a microwave safe bowl and microwave in 30 second increments, stirring well between each interval, until fully melted.
  5. Spread the melted chocolate evenly over the cornflake bars, using an offset spatula to smooth into an even layer. Return to freezer or refrigerator until set (about 1 hour).
  6. In a bowl, whisk together powdered sugar, milk and gel food coloring. The icing should be thick enough to pipe distinct lines.
  7. Remove the bars from the pan. Slice in half lengthwise, then slice into triangles (makes about 16 total).
  8. Transfer the green icing to a piping bag and pipe zigzag lines across each triangle. Top with sprinkles and enjoy.
