2 cups Essential EverydayⓇ Instant White Rice
2 cans Essential EverydayⓇ Black Beans, drained and rinsed
2 cups Essential EverydayⓇ Frozen Whole Kernel Corn
8 raw chicken tenders
1 package Essential EverydayⓇ Fajita Seasoning Mix
2 cups Essential EverydayⓇ Chicken Stock
1 cup Essential EverydayⓇ Mexican Blend Shredded Cheese
Essential EverydayⓇ Salsa, for serving
Chopped fresh cilantro (optional)
Directions
  1. Prepare a hot two-zone charcoal or gas grill fire or preheat oven to 400℉.
  2. Tear off two 18” long pieces of foil for each packet (8 pieces total) and double them up.
  3. In center of each piece of foil, place ½ cup rice, ¾ cup black beans, and ½ cup corn kernels.
  4. Rub chicken tenders with seasoning mix, and place 2 tenders in each foil packet. Bring up sides of foil to hold in contents and pour ½ cup chicken stock into each packet. Seal packets tightly.
  5. Place packets on grill over indirect heat or set on a large sheet pan and place in oven.
  6. Grill or bake until rice and chicken are cooked (chicken should reach an internal temperature of 165℉), about 30 minutes.
  7. Carefully open packets (they will be steaming hot) and sprinkle contents with cheese. Return to grill or oven just long enough to melt cheese, 3-5 minutes.
  8. Serve hot with salsa on the side. Sprinkle with cilantro, if desired.
