PiƱa Colada Icebox Cake

Ingredients
2 cans Wild Harvest Pineapple Slices
1 cup heavy cream
8 oz Wild Harvest Cream Cheese, softened to room temperature
3/4 cup powdered sugar, divided
1 sleeve Wild Harvest Graham Crackers, halved
1 cup toasted coconut
Directions
- Add heavy cream to a stand mixer and beat until soft peaks form (2 minutes). Add in ¼ cup powdered sugar and beat until medium peaks form (2 more minutes). Transfer to a separate bowl.
- In the same stand mixer, beat cream cheese until smooth (2 minutes). Add in remaining powdered sugar and mix until incorporated.
- Gently fold in whipped cream until well incorporated.
- Line a 9x5” loaf pan with plastic wrap. Start with a layer of pineapple rings.
- Next, add a thin layer of cream cheese mixture.
- Next, add a layer of graham crackers, followed by more cream cheese mixture, toasted coconut, pineapple rings, then another layer of cream cheese mixture. Repeat 1 more time, then finish with 1 more layer of graham crackers. Cover with plastic wrap and freeze for 4 hours, or until set before slicing and serving.
