Amazing Muffin Cups

Ingredients
3 cups ORE-IDA Shredded Hash Brown Potatoes
3 tbsp butter, melted
1/8 tsp black pepper
1 pkg (12 oz) Oscar Mayer bacon
6 Eggland's Best eggs
1 pkg (8 oz) Mexican-style finely shredded four-cheese blend
¼ cup chopped red peppers
1 tbsp chopped fresh chives
Directions
- Heat oven to 400°F. Spray a 12-cup muffin tray with cooking spray.
- Combine potatoes, butter, and black pepper; press onto bottoms and up sides of muffin pan cups. Bake 12 minutes or until lightly browned.
- Meanwhile, cook bacon as directed on package; drain on paper towels. Crumble into half-inch pieces.
- Divide bacon among potato cups. Whisk eggs in medium bowl until blended. Stir in cheese and red peppers; spoon over bacon. Sprinkle with chives.
- Bake 13–15 minutes or until centers are set.
