1 cup Essential Everyday brown sugar
1 cup Essential Everyday corn syrup
2 tsp Essential Everyday vanilla extract
5 cups Essential Everyday cornflake cereal
1 cup Essential Everyday pecan pieces
16 oz Essential Everyday white chocolate baking chips
1 1/2 cup Essential Everyday powdered sugar
2 tbsp milk
A few drops of green gel food coloring
Sprinkles
Directions
- In a large pot over medium heat, whisk together peanut butter, brown sugar, corn syrup and vanilla extract until completely smooth.
- Remove from heat and stir in the cornflakes and pecans until well combined.
- Press the mixture firmly into a 9x13” baking dish lined with parchment paper. Refrigerate or freeze while you melt the chocolate.
- Add white chocolate chips to a microwave safe bowl and microwave in 30 second increments, stirring well between each interval, until fully melted.
- Spread the melted chocolate evenly over the cornflake bars, using an offset spatula to smooth into an even layer. Return to freezer or refrigerator until set (about 1 hour).
- In a bowl, whisk together powdered sugar, milk and gel food coloring. The icing should be thick enough to pipe distinct lines.
- Remove the bars from the pan. Slice in half lengthwise, then slice into triangles (makes about 16 total).
- Transfer the green icing to a piping bag and pipe zigzag lines across each triangle. Top with sprinkles and enjoy.
