BEAN & CHEESE QUESADILLAS
- 4 8-inch soft taco style flour tortillas (8-inch)
- 1/2 16 ounce can refried beans (16 ounce)
- 1/2 cup chipotle salsa
- 1 8 ounce package shredded colby jack cheese (8 ounce)
- 4 teaspoons pure vegetable oil divided
Spread about ¼ refried beans on one half of each tortilla. Top each with ¼ salsa and ½ cup cheese. Fold tortillas in half.
In large skillet, heat 1 teaspoon oil over medium-high heat. When hot, add 1 filled tortilla. Cook until golden brown, turning once (about 2-3 minutes).
Repeat with remaining oil and filled tortillas. Cut each quesadilla into wedges.
