Thai Shrimp Pasta


  • Prepare pasta according to package directions; drain.
  • Meanwhile, heat a large skillet over medium-high heat. Add vegetable oil; when hot add carrots and sauté 3 minutes. Add mushrooms and continue sautéing until softened.
  • Add shrimp and green onions; continue sautéing until shrimp are opaque and cooked through (about 6-8 minutes).
  • Stir in sauce and bring to a boil; remove from heat. Toss with pasta.
