CARROT RAISIN SALAD

with Apples & Coconut

Serves : 8 (1/2 cup) servings

INGREDIENTS

  • 2 cups shredded carrots
  • 1 cup diced apples
  • 1/2 cup diced celery
  • 1/2 cup Essential Everyday Raisins
  • 1/2 cup Essential Everyday Chopped Walnuts
  • 1/2 cup Essential Everyday Sweetened Coconut Flakes
  • 3/4 cup Essential Everyday Nonfat Plain Greek Yogurt
  • - juice of 1/2 a lime
  • 1 teaspoon lime zest
  • 1/2 teaspoon Essential Everyday Ground Cinnamon
  • 1/2 teaspoon ground coriander

DIRECTIONS

In large bowl, combine carrots, apples, celery, raisins, walnuts and coconut; set aside.

In small bowl, combine remaining ingredients; salt and pepper to taste. Add to carrot mixture. Toss to coat.

Keep refrigerated until ready to serve.
