Prepare pudding according to package directions using 1¾ cups milk; let stand 5 minutes.
In medium bowl combine, blackberries, sugar, mint, lemon zest and salt.
Crush 2 cookies into the bottom of each of 4 parfait or wine glasses. Top with ½ pudding and ½ berry mixture. Repeat layers, ending with berries.
Refrigerate until ready to serve.
